Abstract

We experimentally demonstrate a surface-plasmon-resonance-based sensor capable of detecting polysaccharide molecules, such as Xanthan gum. Experimental results demonstrate that by attaching Concanavalin A to the gold nanothin-film chip of the sensor, a linear response of the change in reflected optical power to the dissolved Xanthan gum concentration is observed, demonstrating the ability of the developed sensor to detect Xanthan gum concentrations up to 0.22 g/L.
